7 Day Vegan – Day Three

On my way home from school yesterday, I stopped by the grocery store and bought some cacao and chia seeds so that I could make the Chocolate Chia Pudding that I read about earlier.  I mixed everything together around 6pm and put it in the fridge to solidify.  Three and a half hours later, the house was cleaned up, the kids were sleeping, and Morgan and I were ready to finally sit down and relax.  I got the pudding out from the fridge and tasted a small spoonful…

Gross.  It was slimy and bland.  The sliminess I could deal with but if I was going to see this as a vegan indulgence, I wanted it to be sweet.  I had added the recommended half TBSP of maple syrup but I decided I’d add another half.  That was a bit better.  One more half TBSP (1.5 total) and it was now within the realm of indulgence.

Will I have it again?  Probably not.  Did it discourage me from this vegan experience?  No. In fact, I feel excited that there are countless other vegan foods I can try.  Now that I’ve got some cacao and chia seeds, I’ve got a few more options.
