When I signed up for the #7DayVegan challenge, I clicked a box that said something like “Send me an email everyday to check in.” I love getting email so this seemed like a good idea. Yesterday’s email included this video of Jason Wrobel making Superfood Vegan Tacos. If you can make decipher the dozen or so accents that he uses and you’re not too distracted by his nearly insane energy level, the tacos recipe sounds pretty good. I think that I’ll try them this weekend.
After watching the video I clicked over to Jason’s website and perused a few more recipes (I like the text versions much better than the video versions.) Since I have big bag of chia seeds that I bought for Tuesday’s Chocolate Chia Pudding, I thought I might as well try another chia seed dish. This chia seed porridge looked delicious. I didn’t have all of the ingredients so I made a few adjustments. Here’s what I ended up with:
- 1/2 cup chia seeds
- 1 & 1/2 cups almond milk
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- Pinch of salt
- 1/2 cup mixed berries (blueberry, raspberry, blackberry)
- a few cacao chips (I aimed for 1/8 of a cup but I may have been a bit generous)
- 1/2 sliced banana
- 1 tsp cacao powder
I stirred the chia seeds and almond milk together for about 60 seconds then added everything else and stirred. Jason had mentioned that it would fully thicken in about 15-20 minutes (mixing every 5 minutes or so). Maybe it was the almond milk or the maple syrup but my porridge never got as think as I expected. It was still very delicious though. I have about 2 servings leftover in the fridge – breakfast for the next two days.
